Tacos al Carbon

Got a couple piece of beautiful skirt steaks today, since it’s Tuesday, so why not taco? It’s easy and fast, a great recipe for a full meal, or just a quick snack.

  • 1 lb skirt steaks
  • 2 tsp cumin
  • 2 tsp hot chili pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp sea salt
  • 1 orange
  • some cilantro, chopped
  • 1/2 onion, chopped

How to make this:

  1. Mix the cumin, hot chili pepper, garlic powder, paprika and sea salt, juice the orange and marinate the skirt steaks for 1 hours at least, but no longer than 3 hours
  2. Grill the steak on high for 2 min on each side, you can also sear it on a very hot pan for 2 1/2 min on each side
  3. Cut the steak into 1/4 inch cubes, serve it on some tortilla with chopped onion, cilantro, and avocado
