It’s fall! So here is a delicious Brazilian prawn and yucca (cassava) stew recipe to warm up your day! This is a very creamy and heavy stew, sweet and delicious.
You need:
- 1 lb yucca root, peeled
- 1 cup chicken broth
- 2 onions
- 2 cloves garlic
- 2 tomatoes
- 2 lbs prawns (or shrimp)
- 1/2 cup coconut milk
- 2 tablespoons palm oil
How to make this:
- Peel the shrimp, saute the shell with the half of the chopped onion and garlic, cook it for about 3 mins, add the broth and let it simmer for 20 min
- Strain the broth, boil the yucca roots in the broth for around 40 min
- Saute the rest of the onion and garlic until they turn translucent
- Strain the yucca, pour it in a food processor or a blender with the onion and garlic, add the tomatoes, coconut milk, and palm oil; blend it until it turns creamy
- Heat the sauce until it simmers, saute the peeled shrimp with some salt, after they are cooked, cook them in the sauce for 5 min
- Serve it with some rice and add some chopped cilantro to add more flavors
