Parmesan Orzo with Keftedes

Greek food has always been one of my favorites, it’s super flavorful and quick to make. And nothing beats the Keftedes (greek meatball) with Parmesan Orzo; this is basically the Mediterranean version of macaroni and cheese, with meatball.

Processed with Snapseed.

You need:

  • 2 lb ground beef
  • 2 onions
  • 2 cloves garlic
  • 1/4 cup parsley
  • 1 tbsp mint
  • 1 cup breadcrumbs
  • 2 tbsp parmesan
  • 1 egg

For the pasta, you need:

  • 1/2 lb Orzo
  • 2 tbsp butter
  • 2 cloves garlic
  • 200 ml chicken broth
  • 1/2 cup grated parmesan
  • 1/4 cup parsley

How to make this:

  1. Finely chop the onions, garlic, parsley, and mint, mix them with the ground beef, egg, parmesan and breadcrumbs
  2. Let the mixture sit in the fridge for 20 min, preheat the oven to 205C or 400F degree
  3. Spray an oven proof pan with some oil, put the meatballs in the pan and bake them for  30 min
  4. While the meatball is being baked, melt the butter in the pan, add the orzo pasta and chicken broth
  5. Let the pasta simmer for about 1o min, or until most liquid has evaporated
  6. Add the parsley, minced garlic and parmesan, turn off the heat and mix the orzo evenly
  7. Serve it with some more cheese, tzatziki sauce, and lemon
