Greek food has always been one of my favorites, it’s super flavorful and quick to make. And nothing beats the Keftedes (greek meatball) with Parmesan Orzo; this is basically the Mediterranean version of macaroni and cheese, with meatball.
You need:
- 2 lb ground beef
- 2 onions
- 2 cloves garlic
- 1/4 cup parsley
- 1 tbsp mint
- 1 cup breadcrumbs
- 2 tbsp parmesan
- 1 egg
For the pasta, you need:
- 1/2 lb Orzo
- 2 tbsp butter
- 2 cloves garlic
- 200 ml chicken broth
- 1/2 cup grated parmesan
- 1/4 cup parsley
How to make this:
- Finely chop the onions, garlic, parsley, and mint, mix them with the ground beef, egg, parmesan and breadcrumbs
- Let the mixture sit in the fridge for 20 min, preheat the oven to 205C or 400F degree
- Spray an oven proof pan with some oil, put the meatballs in the pan and bake them for 30 min
- While the meatball is being baked, melt the butter in the pan, add the orzo pasta and chicken broth
- Let the pasta simmer for about 1o min, or until most liquid has evaporated
- Add the parsley, minced garlic and parmesan, turn off the heat and mix the orzo evenly
- Serve it with some more cheese, tzatziki sauce, and lemon
