Gotta really tired of bringing sandwiches for lunch? There are many easy alternatives, like the Chinese Bao Zi, or the Italian Calzone! However, one of my favorite is the Jamaican Patties. Unless you are Jamaican or live in the NYC, you probably don’t see these delicious little pockets very often, so let me explain! A beautiful gold crust made with butter and a pinch of turmeric becomes the most perfect flakey shell, with in it, a spiced ground beef, cooked with any seasonal vegetables to tender! You can carry them anywhere you go, and is probably one of the easiest pocket type dish to make (compare to empanadas or Sheng Jian Bao).
One of my favorite dishes, 红烧牛肉面 or the Sichuan braised noodle soup, is the perfect dish on this especially cold winter, I made the noodle this time using the traditional hand pull style, the dough, after kneading for 30 minutes, has developed an extra chewy texture that beats even the best ramen in the world! A friend reminded me how good homemade bread tasted and how easy it is to make them, so I decided to bake again! No special equipment, no crazy wood ovens, just some flour, yeast, water and salt, in a home electric oven. And the result are amazing, perfectly baked crust with a tender inside makes it great for a sandwich, or just butter on toast, hopefully, more bread will be on it way!
The yolk that’s so runny that it’s almost a sauce! The secrets of a perfect scotch egg is timing, soft boiled egg that need to be gently peeled, then wrapped with minced sausage, breaded and deep fried in order to achieve the perfect crunchy shell, juicy sausages, tender egg whites, and runny yolk!
It’s on a cold winter day that makes me really misses a dish like this, 水煮鱼 (shui zhu yu), though translates to “poached fish”, it tastes nothing like the name. The technique 水煮 is a classic Sichuanese cooking method from the sub-group 盐帮菜, a region along the Yangzi river that’s famous for its salt and spice trade. It’s main characteristics, includes 麻/tingling, 辣/spicy, 鲜/umami, 烫/hot, create a dish that’s well balanced! The pickle cabbages are cooked into a slightly acidic broth, mixed with blood red chill oil over a scorching hot stove, then poured on thinly sliced white fish, and let the heat from the broth and oil cook to cook the fish to perfection. The perfect balance between acidity and spiciness marinates every muscles and bones in you body, and creates a perfect dish that not only opens up your appetite, but also warms your body & soul.
Sometime, I miss living in east Asia, mostly because of the delicious food that’s basically everywhere, like this beautiful matcha ice cream laying on a bed of coconut milk!
Unless you are in Scotland where you can get a munch box filled with gyro, pizza, and all kinds of fried deliciousness, tacos are probably the best late night drunk food. Different kinds of grilled, braised, roasted, seared meats lay on soft, warm corn tortillas, covered with some kind of salsa, cilantro and onion, forming the perfect bite of goodness!
